^Hm... I've never thought of using the middle finger like shown in the first two gifs.

Never seen a nick put in the end of a blade for that very reason. As you slash the nick snags the skin thus increasing damage.

That's the condition I try to keep all of my kitchen knives in. lol

I just keep my pocket knives shaving sharp, they don't need to be at the same level and wouldn't stay that way long if they were. ;)
